Candied Yams
1 (29 ounce) can sweet potatoes 1/4 cup butter, cut into pieces 1/2 cup brown sugar 1 1/2 cups miniature marshmallows Directions Preheat oven to 400 degrees F (200 degrees C). Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows. Cover and bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted

ANGIE'S CANDIED YAMS
1 large can sweet potatoes 2 teasthingys butter 1/4 cup brown sugar 1 teasthingy cinnamon 1/2 cup cinnamon red hots 1 cup marshmallows
Drain 1/2 of the juice from the can of sweet potatoes. Place in a casserole dish. Dot with butter. Mix brown sugar and cinnamon together and sprinkle on top. Sprinkle with candies and add cover top with marshmallows. Cover loosely with foil and bake for 20-25 minutes at 325°F.

CANDIED YAMS
1 1/2 to 2 yams 3/4 c. brown sugar, packed 3/4 lb. chopped walnuts 1 (16 oz.) can crushed pineapple (juice included) 1/2 stick butter Marshmallow butter
Peel yams and boil until cooked. Mash with butter after draining water (no milk); mix sugar, pineapple, juice, and nuts. Pour into potatoes and mix well. Pour in baking pan or casserole and bake about 3/4 hour at 350 degrees. Remove from oven and cover with marshmallows and a few dabs of butter. Return to oven until marshmallows are golden brown.

CANDIED YAM CANDY www.cooks.com/rec/doc/0,197,139181-232205,00.html 2 c. sugar 1/2 c. evaporated milk 1/2 stick butter 3 tbsp. marshmallow cream 1 c. chopped pecans 1/2 c. cooked, mashed yams 1/2 tsp. vanilla Bring sugar, milk and butter to a boil for 2 to 3 minutes. Add pecans and yams. Cook until it starts to sugar. Remove from fire; add vanilla and marshmallow cream. Beat until candy loses its gloss. Pour into buttered dish. Cut into squares. Makes approximately 42 small pieces.

Easy Candied Yams
Ingredients 4 cups chopped sweet potato 1 (12 ounce) jar caramel topping 1/8 cup brown sugar 1/2 cup butter 1 cup miniature marshmallows Directions 1.Preheat oven to 325 degrees F (165 degrees C). 2.Place sweet potatoes in an 8x8 inch square baking dish. Pour caramel over potatoes. Sprinkle with sugar and dot with butter. 3.Bake in preheated oven 30 minutes, until potatoes are tender and mixture is bubbly. Remove from oven and sprinkle marshmallows evenly over potatoes. Return to oven until marshmallows are melted and browned, 5 to 10 minutes more.

*****Southern Style Candied Yams***
2 lbs. yams, peeled and sliced into 1/4 inch slices 1 1/2 cups water 1 tsp. vanilla 4 tbsp. butter 1/2 cup light brown sugar or more to taste 1/2 tsp. cinnamon 1/2 tsp. allspice 1 cup raisins 2 cups pineapple chunks
Preheat oven to 400. Place yams in a 12x12 inch baking dish. Pour in the water and vanilla. Mix the butter, sugar, cinnamon, and allspice in a small bowl til blended. Sprinkle this mixture over yams, cover with foil, and bake 45 minutes. Sprinkle the raisins and pineapple over the yams and baste with juices. Cover with foil again and continue baking about 20 minutes more til tender.

Yummy Candied Yams
Ingredients 4 pounds yams (or sweet potatoes), peeled and cut to large bite-sized pieces 2 cups orange juice 3 cups light corn syrup 1 teasthingy ground cinnamon 1 teasthingy ground nutmeg 1/4 cup vanilla extract 2 teasthingy lemon zest 2 tablesthingy flour 1 1/2 cups light brown sugar, packed 1 1/2 cups granulated sugar
Directions Preheat oven to 350 degrees F.
Boil yams until slightly underdone, to avoid breaking. Strain, cool and set aside.
In a large container whisk together orange juice, corn syrup, cinnamon, nutmeg, vanilla and zest. In another bowl, whisk flour and both sugars together.
Put cooled yams in a deep baking dish, add dry ingredients and stir to coat. Pour liquid over yams and bake for 20 to 25 minutes.

QUICK & EASY CANDIED YAMS
2 (16 oz.) cans or 1 (29 oz.) can cut yams or Royal Prince 5 tbsp. butter 1/3 c. brown sugar, firmly packed 1/3 c. chopped nuts (optional) 1 c. miniature marshmallows (optional)
Stove top directions. Pour sweet potatoes and liquid into 2 quart sauce pan. Cook until are heated through. Drain liquid and set aside. While sweet potatoes are heating combine butter and brown sugar in 1 quart sauce pan and cook until hot, but not boiling. Add nuts to sauce if desired and pour over hot sweet potatoes. Stir just to coat. Serve immediately.

CANDIED YAMS CASSEROLE
8 c. raw sweet potatoes, shredded 3 sticks butter 3 c. sugar 1 c. brown sugar 2 c. milk 1 tsp. vanilla 1 tsp. cinnamon 4 eggs 1/2 c. finely chopped pecans 3/4 c. pecan halves Miniature marshmallows
Place shredded potatoes in a buttered rectangular pan. Mix all other ingredients except marshmallows and pecan halves. Pour mixture over potatoes. Bake at 325 degrees, uncovered for 1 1/2 hours. Then top with pecan halves and bake 30 minutes. Add a layer of marshmallows and return to oven for about 5 minutes or until slightly brown.

Candied Yam Cupcakes
Prep Time: 20 Min Cook Time: 35 Min Ready In: 1 Hr 25 Min
Ingredients 1 pound yams, peeled and cubed 4 eggs 1 cup canola oil 1 cup white sugar 1 teasthingy vanilla extract 2 cups all-purpose flour 2 teasthingys baking powder 1 teasthingy baking soda 2 teasthingys ground cinnamon 1 teasthingy salt 3 ounces cream cheese 1/2 cup butter, softened 1 teasthingy vanilla extract 2 cups confectioners' sugar
Directions Place a steamer insert into a large saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the yams, recover, and steam until very tender, about 15 minutes. Remove yams from steamer and allow to cool slightly. Preheat oven to 350 degrees F (175 degrees C). Line 2-12 cup cupcake tins with paper liners. Place eggs, oil, sugar, vanilla extract, and cooked yams in a large bowl; beat with an electric mixer until light and fluffy. Sift together flour, baking powder, baking soda, cinnamon, and salt. Stir dry ingredients into yam mixture, mixing just until combined. Pour batter into paper liners, filling 2/3 full. Bake in preheated oven until a toothpick inserted in the center of a cupcake comes out clean, 17 to 20 minutes. Cool in pans for 5 minutes, transfer to wire rack to cool completely. Beat together cream cheese and butter until fluffy. Beat in the vanilla extract and confectioners sugar; mix until smooth. Frost cool cupcakes with cream cheese frosting.

Oven-Baked Candied Sweet Potatoes Recipe

Ingredients: 1/2 cup brown sugar 1 teasthingy pumpkin pie spice 3 pounds sweet potatoes, peeled and cut into 1-inch pieces 2 tablesthingys orange juice 1 teasthingy vanilla extract 2 tablesthingys butter or margarine, cut up
Directions:
Preheat oven to 350F.
Combine brown sugar and pumpkin pie spice in a large bowl; add potatoes and toss well. Spread in a 9x13-inch baking dish.
Combine orange juice and vanilla extract; pour evenly over potatoes. Dot potatoes with butter.
Cover and bake 40 minutes. Remove from oven and stir. Bake uncovered an additional 15-20 minutes or until potatoes are fork tender.

Baked Candied Tangerine Yams Recipe Ready in: 30-60 minutes
Serves/Makes: 4
Ingredients: 4 Yams -- canned, halved 1/2 teasthingy Butter Or Margarine 3/4 cup Pancake Syrup 1 cup Tangerine Juice 1/4 teasthingy Rum Extract 1/4 cup Dark Brown Sugar 1 teasthingy Allspice 2 Tangerines -- sectioned
Directions:
Heat oven to 350 deg F.
In a shallow baking pan arrange yam halves; dot with butter. Mix remaining ingredients, except tangerine sections; pour over all. Bake for 25 minutes, uncovered; baste with syrup once or twice during baking.
Remove from oven; scatter tangerine sections over top of yams; return to oven for another 5 minutes. Can be served at room temp or chilled.

Down South Candied Yam Cake
Ingredients2 c Sugar 1 1/2 c Margarine/butter 1 1/2 tb Vanilla 5 x Eggs 16 16oz candied yams,drained, Reserve 1T yam liquid 3 c All purpose flour 2 tb Baking powder 2 tb Soda 1 ts Salt 2 tb Cinnamon 1/2 ts Nutmeg 1 c Chopped pecans 1 c Raisins 8 1/4 8 1/4 oz can crushed pineapp Well drained, reserving 1/4 Liquid FROSTING 1/2 c Packed brown sugar Dash of salt 1/4 c Margarine/butter 1/4 c Reserved pineapple liquid 2 tb Half and half 1 tb Reserved yam liquid 3/4 c Powdered sugar 1 ts Vanilla 8 x Pecan halves
PreparationHeat oven to 325F. Grease and flour 10 in tube pan. In large bowl, cream sugar, 1 1/2 c. margarine and 1 1/2 tsp vanilla until light and fluffy. Add eggs, one at a time, beating well after each. Cut up yams; add to vreamed mixture, beating until well mixed. lightly sthingy flour into measuring cup; level off. Add flour, baking powder, soda, salt, cinnamon and nutmeg; mix well. By hand, fold in pecans, raisins and drained pineapple. Sthingy bater into prepared pan;spread evenly. Bake at 325F for 65-75 minutes or until toothpick comes our clean. Cool upright in pan 10 min. Invert onto serving plate. In medium saucepan, combine brown sugar, dash salt, 1/4 c margarine, reserved 1/4 c. pineapple liquid, milk and reserved 1 T yam liquid. Bring to a boil; boil threee minutes, stirring constantly. Remove from heat; beat in powdered sugar adn 1 tsp vanilla until smooth. Cool about 10 min. to allow frosting to thicken slightly, beating occasionally to maintain smooth consistency. Beat well, quickly sthingy ocer cake, allowing some to run down sides. Garnish with pecan halves. (Note: to substitute yams, use 1 1/4 c. mashed, cooked sweet potatoes)
